For all that Dallas can lay claim to, the upscale cocktail scene isn’t one of those things. For years, bars in the city lagged behind, serving watery well drinks or sorority-girl classics like cosmos and sugar-laden “martinis.” But, recently, Dallasites have realized that it doesn’t have to be this way, as a new generation of bartenders and restauranteurs have ushered in bars dedicated to the history, the craft, and the ingredients of cocktail culture. Now, Dallas’s thriving booze scene means that there’s something for everyone, regardless of whether you’d like to sip a genever-loaded drink with “alpine woodland essence” (a la Midnight Rambler) or just tuck in at a grungy, Sharpie-covered bar for a burger and a pint of Lone Star (a la Adair’s). Either way, we’re fans.
